Baked Poato Chips!

These looked so good on pinterest so we had to make them!
Pretty self explanatory, but slice up your potatos as thin as you can, which can be kind of a pain. Put all the slices in a bowl and add your olive oil and mix around, then add your spices and mix around again.

We added parmesan to it to top it off before putting them in to bake :) #cheeseoneverything

Bake at 375 until you've reached the crisp of your choice, and Wa-LA! Yummy side dish or something to snack on if your craving potato chips! Next time I'm going to try this with sweet potatoes & brown sugar!!

Avocado Smoothie!

more like avocado smoothie...fail.

I've been trying to get myself to like avocados, buuttt I haven't reached that point yet. I saw a recipe on Pinterest which of course I couldn't find now, to put it in your smoothie. I make a lot of green smoothies so I was curious to try this as well.

Avocado, milk (I didn't have almond) Greek yogurt, spinach and honey.

Blended them all together with ice and I just didn't love.. very creamy. I could probably edit the recipe, less milk, less yogurt etc. but it certainly wasn't my fav.

I added some mangos and pineapple to hopefully make it better, helped a little bit but I would still be hesitant to try again. I think it's the avocado, I just don't have the taste for it unfortunately.

Baked Buffalo Cauliflower

Here goes the first blog post trying out different  Pinterest recipes!

The first one is Baked Buffalo Cauliflower. First I'd like to add that 1. Andrea and I have been in a cauliflower phase where we each eat a head of it on a weekly basis, dipped in buffalo sauce, which we've also been eating a lot of, whether it's celery, cauliflower, you name it, we dip it.

SO Andrea found a recipe on none other than Pinterest to bake cauliflower so we of course had to try it because we've been eating it raw all the time.

We use Sweet Baby Rays Buffalo Sauce, or this Buffalo Wing Sauce I got at the Dolla Store, both taste delish, if you're a buffalo fan.

Ingredients:
  • ½ c. white rice flour

  • ½ c. water

  • Salt and pepper to taste

  • Cauliflower

  • Buffalo Sauce of your choice

  • So first we just mixed together the flour, water & a dash of salt into a bowl, as you see Andrea doing :) then we put the cauliflower in the bowl, carefully trying not to add too much batter to each piece so it didn't get mushy when it bakes or anything.

Then we spread the Cauliflower out on a pan, and put it in the oven to bake at 450 degrees. After it baked for a while and it started to look a little crunchy, we dumped them into a bowl and poured our buffalo sauce on, mixed it around and put it back in the oven for a while till it got even more crunchy. Don't think we really timed it much, just kind of watched :)

We ended up dipping them into buffalo sauce, cause as you can see in the very first pic it was light on the sauce, and we love our buffalo, soo. We didn't LOVVEE it, but it wasn't bad, we'll def try making it again to try and perfect it. I think it will take a couple times to perfect the crisp/crunch to the cauliflower and avoid softness.

    I give it.. a 6 out of 10 rating!

    GREEN Smoothie

    hola!

I keep seeing green smoothie recipes all over pinterest and finally decided to make one. And after drinking it,  I conclude I'll be making a lot more going forward! In hopes to lose 25 pounds and not eating enough fruit and veggies this is a great way to get them in, I especially like them post work out.

    I used..

    (roughly)
    3/4 cup frozen pineapple
    3/4 cup frozen mango
    1 low fat greek yogurt
    2 cups baby spinach
    5-6 cubes
little bit of water to blend
    Total calories: 216
    Protein: 17grams

This made about 2 smoothies, it was more than I planned but defs drank it all, which made it really filling. I had this and 5oz of grilled chicken for lunchy!

I'm excited to mix up the ingrediants a bit, swapping for bananas and different fruit :)
