Strawberry Shortcake Protein Pancakes

In continuation of my waffle/pancake attempts.. I tried a new one this morning! Strawberry Shortcake  flavored! OMGGG, such a good choice on my part :p 

First I tried them in my waffle maker.. I was hesitant because the mix was super liquid-y but I figured wharves that's what the recipe says! Well.. here's how it turned out. 


Okay soo then I whipped out my pancake for beginners, if you will.. because like i said in my last post i just can NOT nail the pancake making and flipping on my own. 
This is a Bobby Flay pan from Kohl's I bought when I still worked there.. i wish though that the circles were bigger.. so I may have to do some Amazon shopping for a bigger pancake circle dealy. If anyone has any recommendations.. do share! 

The recipe I used was from a gal I follow on Instagram as of late, and love! She has been such an inspiration and posts the most amazinnggg waffles and pancakes and protein yogurt deals! I just bought her E-Book on flexible dieting i'm excited to receive! 

For the batter... 
1/2 cup plain non fat greek yogurt 
1 scoop strawberry protein powder (minus 1-2 TBSP) 
3 Egg whites 
2 tbsp coconut flour 
1/3 cup unsweetened almond milk 
1/4 cup rolled oats 

For the topping... 
1-2 TBSP Strawberry Protein Powder 
2-3 TBSP plain non fat greek yogurt
splash of almond milk 
1 packet stevia 

You can play around with the topping mixture to get the consistency you like.. next time i'll add more of each to make a little more to cover all the pancakes. Then I added 1/2 cup strawberries and 1/2 cup raspberries and topped with 3 TBSP on whip cream 




I thought it tasted just like Strawberry Shortcake!!!!!

Cinnamon Pumpkin Protein Pancakes

Tis the season, for pumpkin everything! 
Last year was my first year that I actually got into the pumpkin trend..I mean I went all out last year. Though I'm not even a huge fan of the PSL. I had to swoop up some canned pumpkin and make some waffles! I picked up a waffle maker because i swear I don't know how to make pancakes... I can never flip them good and they become a mess. My first time making waffles turned out good.. my second time BAD. I feel like it's a hit or miss.. but making protein waffles/pancakes are so key and have such good maces, and you can make them in so many different ways! 

Here's the recipe I used! 

For the pancakes it's... 

1/2 cup oats chopped
1/2 cup pumpkin puree
1 scoop of whey protein powder (I strongly recommend cinnamon protein) 
2 egg whites
1/2 c almond milk
1 tsp cinnamon
1 tsp vanilla
1 tsp stevia

( I blended the ingredients in my nutri-bullet) 

Then the topping is : 

1/2 c Greek yogurt
1/4 c almond milk
1 tsp cinnamon
1 tsp vanilla

Next time I'll probably only use 1/4 cup or 1/3 cup for the topping, it was a little too much. Then I just threw on 2 tbls of lite whip cream!
